Why Pay The Big Bucks When You Can Achieve More With Less?
Now there's been many many people who have told me that there's just no way you can control the temperature with an open grill like the one's I use in the woods. If you've been on this site, you may have seen what I call our open face rocket grill. Believe it or not, you can control the temperature if you just use your imagination. For the purpose of this article, I'll just make it easy for everyone.
The first thing I want you to pay attention to is the concrete block at the bottom. This is a key part of the design. I do not use logs with this grill that have a diameter greater than the height of the block. This is key to ensuring that the proper temperature is achieved with whatever is smoked/grilled without burning the meat. Take a look at the image below. You will notice that I have marked what I consider the low setting and the high setting. When using this grill, my objective is to get the big logs burning but not to put items on the grate while the flame is up. This method has been extremely successful in cooking everything from boston butt to tender ribs that you wouldn't believe how great they turn out.
What is also important when using this type of grill is that slow cooking is best. It doesn't take much to burn your food. So, it's best to plan for a long cook and stick with the low setting. That being said, once you get the hang of it, you can actually smoke meat because of the height the meat is away from the heat source. There's really no guess work. Patience is key. Try to keep your logs at the low level. Pay attention to how fast your logs are burning. And don't be afraid to add more when the fire burns down.
I've heard people swear by pellet grills, weber grills, and charbroiler side smoker type grills... And they are all great choices for barbecuing. But, there's just something about taking on these grills with bricks, sticks, and good old fashioned know how. When people see my ugly grill, I know they cringe. But when they see what it produces, they don't believe it. Like so many things in life, you can't judge a book by the cover. The design of this grill produces temperatures between 175F and 255F on the low setting and between 350F and 550F on the high setting... I never go high with this method. And I promiss you if you try it, you will be shocked at the results.
